$50 per adult, $25 for kids ages 12 and under

A celebration of RMBL’s history, this evening is an opportunity to enjoy a fine dinner in RMBL’s beautiful billy barr community center followed by tours through the town site and RMBL’s historic buildings. Tours will be led by guides conversant in RMBL’s rich history, from its founding as a mining town through the transition to one of the world’s premier biological field stations. History Colorado honored RMBL in 2015 with the Stephen H. Hart award for its work preserving the historic town site.

4:30 – 5:30 pm – Appetizers
5:30 – 7:00 pm – Dinner
7:00 – 8:00 pm – Town site tours
Cocktail Hour
Charcuterie boards of various cured meats and cheeses. Served with Breadery sourdough slices and made in house cultured butter
Course 1
Wood-fired Nantucket Bay scallop, coconut vichyssoise, charred leek, lemongrass-shisho infused olive oil, yucca crisps
Course 2
SRA aquaponic salad greens, frisée, Olathe corn ribs, brown butter Breadery croutons, jalapeño, chile-lime Pepita, baby manchego, Paonia peach-habanado vinaigrette
Course 3
Snake River Farms wagyu ribeye, purple Pommes dauphine, hay smoked Bleu cheese flan, Juno Farms blistered tomato and shishito salsa, watercress puree
Dessert
Salted caramel budino, pretzel hazelnut nougat, dark chocolate ganache
